Lamb & Goat Cheese Sandwich


Currently, I am one busy woman. Hence the decline in posts. (Sorry) I am in search of a house, the semester is at full steam, I need to figure out how to go about getting hitched without having a " traditional wedding," I have the worst allergies of my life and I am recovering from stomach flu. Okay, done venting.

When I am in "running around like a chicken with its head cut off" mode, like I am now, I have little time for cooking. I tend to eat out a whole lot more and when I actually do make a meal at home I want it to be very quick and more importantly comforting but simple. I usually look to standard pantry items or left overs from my nights out at restaurants. This week is definitely one of those chicken-no-head types of weeks, so I am turning to the sandwich. Its easy, can be made with anything and is both comforting and simple to make. Perfect for a busy week.

This sandwich is nothing more than left over lamb (from Asti's ossobuco, delicious!), goat cheese, a few leaves of fresh spinach and good bread. If you don't have lamb on hand, you could really use anything, chicken, pork or beef, they each would work. I have to say, this sandwich is probably one of the better things I've eaten lately.

Lamb & Goat Cheese Sandwich
Lamb (chicken, pork, beef fully cooked and needing a use)
1 tablespoon butter
2 slices of good bread
1 ounce of goat cheese
a few good sized spinach leaves
pinch of salt and pepper

Cut your meat of choice into bite size pieces. Warm over medium heat in a skillet. Once warm set aside. Add the butter to the skillet over medium heat, once melted place one slice of bread flat on the skillet. Top the bread with the meat, then goat cheese, then spinach. Sprinkle the top of the sandwich filling with salt and pepper. Top the sandwich with the other slice of bread. Allow the first bread slice to cook until golden, then flip the sandwich, cooking the other side until golden. Then serve.
